I can’t wait any longer, I am ready for PEPPERMINT! Bring on the peppermint and candy canes! And pie. Peppermint Pie!
Um, yeah, just like that right there – peppermint and chocolate! While I’m not one for peppermint everything, I am a little obsessed with peppermint ice cream. I l-o-v-e it. I squeal with slightly embarrassing glee when I first spot it in the grocery stores, typically in late October. And I might be guilty of, well, hoarding it, when the season comes to an end. If I pack the freezer tight I can sometimes get through until late spring. For some strange reason, I kept encouraging my daughter to try it (she’s not real big on “new things” when it comes to food) so now I have to share it with her. Short sighted on my part, I know.
When I got a copy of the amazing new cookbook, “12 Days Of Christmas With Six Sisters’ Stuff“, and saw that they had a recipe for Peppermint Crunch Ice Cream Pie, the hunt was on to find the ice cream, and make the pie. After looking (okay, stalking) a few stores, I finally found some at Target. After that first carton somehow disappeared without becoming pie (whoops!), a second carton was obtained, and pie was made!
Oh my heck, this is a GOOD pie, and it’s so simple to make, perfect for the hectic holiday season. That’s what this awesome cookbook, from the amazing gals behind Six Sisters’ Stuff, is all about, helping you get through the holidays, with 144 ideas for traditions, homemade gifts, recipes and more.
This book is such a great guide for the holidays, it has a little bit of everything, and it’s all so simple and actually do-able for busy families. From Christmas cookies to brunch to meal recipes, gift ideas, ways to give back to sanity saving tips, it’s a great how to survive (and thrive!) the holiday season.
It’s got a bit of everything. And THIS PIE!
While I do loads of cookie and candy baking and making during the holidays, I don’t tend to have a lot of “bring a dessert” type of recipes that I rely on. Cookie platters I’ve got figured out, and I get a bit laser focused on those, so it’s great to have some simple recipes like this to depend on during the hectic holiday season. Though let’s be honest, I’ll totally make this pie in March if I make my stockpile of peppermint ice cream last that long. š
Can I offer you a fork? šĀ What is it about chocolate and peppermint? It’s like delicious magical goodness. Thankfully Six Sisters’ Stuff was happy to let me share this easy recipe with you.
Peppermint Crunch Ice Cream Pie
Ingredients
- 1 1 & 1/2 quart package, peppermint ice cream, softened slightly
- 1 premade Oreo cookie pie crust
- Chocolate fudge ice cream topping for garnishing
- Non-dairy whipped cream topping or sweetened whipped cream
- Crushed candy canes for garnishing
Instructions
- In a large bowl, stir ice cream until softened.
- Spoon ice cream into pie shell and spread evenly. Freeze 3 to 4 hours or until solid.
- To serve, let pie stand at room temperature about five minutes before slicing. Serve topped with fudge topping, whipped cream, and crushed candy canes.
- Makes about 6 to 8 servings.

We were so excited to make and serve this for Christmas dessert.. we bought Dryers peppermint ice cream, itās white so I added a couple drops of red gel food coloring.. in never froze back to a solid state.. was in our freezer for over 24 hours any ideas?

Peggy, I’m guessing it’s the ice cream. There are so many variables, and I feel like the ice creams I’ve bought in the past year or so are a bit more soft so to speak. I have noticed that some brands are changing formulas, likely to take out artificial ingredients, but it is impacting the texture. At this point I find the plain versions of Breyer’s tend to harden up the best.
