I have such a fun and easy recipe for you today – No-Bake Mini Cheesecakes! Delicious, simple and perfect for summer.
These are so quick to make, and they light and airy and taste delicious. KRAFT is celebrating cheese this month with ‘For The Love Of Cheese’ and these mini cheesecakes feature one of my favorite cheese products, PHILADELPHIA Cream Cheese. It’s such an incredibly versatile product for cooking, baking and of course eating straight (hello, bagels and cream cheese!). I even pack it into the lunch box sometimes with a turkey tortilla wrap. Obviously it’s the start of the show in cream cheese frosting and cheesecakes, but I also love to use it with pasta and in a variety of dip recipes. I think cream cheese is one of the most versatile ingredients found in my fridge!

I can’t even stand how cute these are! The sprinkles on top? Swoon, SO fun! No baking required, you can whip them up in a matter of minutes and pop them in your fridge (or even freezer) and enjoy them nice and cold, something perfect for hot summer days.
Let me walk you through this simple recipe from Kraft. You start with your ingredients…
Then add cupcake liners and sandwich cookies to a muffin pan.
Next you combine your PHILADELPHIA Cream Cheese (softened), sugar and COOL WHIP Whipped Topping, then spoon it on top of your cookies.
Add some sprinkles and chill. Seriously summer simplicity here.
Because it’s so hot here in Phoenix, I opted to put mine into the freezer. Thanks to the addition of COOL WHIP Whipped Topping in these, even in the freezer they don’t turn hard, and maintain a light and airy texture that is fabulous.

No-Bake Mini Cheesecakes
Ingredients
- 1 pkg. 8 oz. PHILADELPHIA Cream Cheese, softened
- 1/2 cup sugar
- 1 tub 8 oz. COOL WHIP Whipped Topping, thawed
- 12 OREO Cookies
- 2 Tbsp. multi-colored sprinkles
Instructions
- Beat cream cheese and sugar until blended. Gently stir in COOL WHIP.
- Place cookies in 12 paper-lined muffin cups; top with cream cheese mixture and sprinkles.
- Refrigerate 1 hour.
