Minty and delicious, you can whip up this easy Grasshopper Pie in no time at all. While it’s great year round, it’s absolutely perfect for a St. Patrick’s Day dessert. I love all of the fun holidays in spring such as Valentine’s Day and St. Patrick’s Day. They are simple days where it’s fun to do something special for the kids. We don’t do anything big, but little special touches are fun and things that I hope the kids remember when they are older. For St. Patrick’s Day it’s always fun to make a green dessert, and this year I’m making this simple Frozen Grasshopper Pie recipe from Kraft.
This pie could not be simpler, and I can whip it up in the middle of the day, pop it into the freezer and pull it out to surprise the kids after dinner. Add a few fun gold coins and gold star confetti, and it’s a simple way to bring some St. Patrick’s Day fun to a Tuesday night. These are the little things that don’t take much time or effort, but the kids really enjoy.
As a mom, I often feel like it’s a struggle to find the time to do all the things with and for my kids that I’d like to do, and with my oldest nearing the end of elementary school, I’m so very aware of just how fast time ticks by. I see all these fun and elaborate ideas on Pinterest, but never seem to make them happen. That’s why I love a super easy dessert like this one, the kids don’t care if I spent hours or minutes making it, they just delight in a delicious dessert – that happens to be green!
Feel free to get creative with this recipe. You can make the chocolate cookie crust, or pick one up at your grocery store. You can use grated BAKER’S Chocolate on top, and if you have some St. Patrick’s Day sprinkles (I used cute little green shamrocks) you can add them for some extra color, but don’t worry if you don’t have them, your family will love it anyway. And if your kiddos don’t love mint, you could even add a bit of green food coloring to vanilla ice cream and pull of the same look with a different flavor. Whatever works for YOU!

Grasshopper Pie
Ingredients
- INGREDIENTS
- 24 OREO Mint variety cookies divided
- 3 Tbsp . butter melted
- 3-1/2 cups chocolate chip-mint ice cream softened
- 1-1/2 cups thawed Cool Whip or whipped cream
Instructions
- INSTRUCTIONS
- 1. Crush 18 cookies; mix with butter. Press onto bottom and up side of 9-inch pie plate.
- 2. Spread ice cream onto bottom of crust. Freeze 3 hours.
- 3. Remove pie from freezer 15 min. before serving. Top with whipped topping and grated chocolate. Place 1 of the remaining cookies in center of pie. Cut remaining cookies in half; use to garnish pie.

I LOVE grasshopper pie!! For my 7th birthday I had a tea party and had grasshopper and pink squirrel pies as my dessert. 20+ years later people still talk about those desserts!
