Easy Coconut Cupcakes
I love coconut desserts for spring, especially for Easter. From coconut macaroons to coconut cream cheesecake bars, it’s all good! These moist and delicious easy coconut cupcakes do not disappoint. I whipped these yummy cupcakes up from a Pillsbury Yellow Cake Mix.
Not only do these easy coconut cupcakes make for a tasty treat, but they are so easy that they are great to make with the kids. Decorating is easy as well, toppings like toasted coconut and Easter candy work perfectly on these easy coconut cupcakes.
My youngest daughter loves to help in the kitchen, but she can be a bit, well, distracting. I find that sticking with simple recipes works best, so that I can keep track of things! I love starting with a cake mix and mixing thing up. A little coconut milk and shredded coconut turns a yellow cake mix into delicious easy coconut cupcakes.
It’s easy to stock up on Pillsbury cake mixes and frosting when you are shopping at Walmart. It’s great to have some on hand so that you can mix up a moment any time.
I measure the ingredients and my little helper pours. One of my favorite tasks to give my little helper is to have her put the cupcake liners in the pans.
Some Pillsbury Cream Cheese Frosting and a little toasted coconut and you have delicious, easy coconut cupcakes.

Easy Coconut Cupcakes
Ingredients
- 1 box Pillsbury Yellow Cake Mix
- 1 cup coconut milk make sure it's coconut milk
- 1 cup sour cream
- ½ cup vegetable oil
- 3 eggs lightly beaten
- 1 cups shredded or flaked coconut
- 1 can Pillsbury Cream Cheese Frosting or Vanilla Frosting
- cup Optional 1 additional shredded coconut to garnish cupcakes
Instructions
- 1. Heat oven to 350°F. Line cupcake pans with 24 cupcake liners.
- 2. In a large bowl beat together cake mix, coconut milk, sour cream, vegetable oil, and eggs. Stir in 1 cup shredded or flaked coconut.
- 3.Evenly divide batter among prepared muffin tins, filling each cup three-quarters full. Bake, for approximately 20-24 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely.
- 4. Frost with Pillsbury Vanilla or Cream Cheese Frosting and garnish with toasted or shredded coconut. Decorate with Easter candies if desired.
