Ingredient Notes
Here’s what you will need to have on hand to make homemade sweet potato fries in your air fryer.
- Sweet Potatoes – Red Garnet and Jewel are both great sweet potato varieties to use in this recipe. Look for orange and red skin, with deep orange flesh.
- Olive Oil – Always use a high quality, extra virgin olive oil. My favorite grocery store olive oil is the California Olive Ranch brand, with Bertolli being a close second.
- Salt – While any salt can do, I am partial to Diamond Kosher or a sea salt.
- Garlic – Fresh minced is best, the minced jar or frozen garlic will work as well.
- Pepper – Your day to day ground pepper will work fine.
- Onion Powder – Make sure you check that you are using onion powder, and not onion salt, or your fries might be a bit too salty.
- Seasoning Salt – Lawry’s is my typical go to for seasoning salt.
- Cornstarch – Cornstarch is a great ingredient to help get that deliciously crispy fry texture we all know and love.
How To Make Sweet Potato Fries
Begin by slicing your sweet potatoes very thin. Use a mandolin if possible. They must be the same thickness (or thinness in this case). The thinner they are the crispier they will be.
Soak the sweet potato chips in cold water for at least 30 minutes. Then use a colander to drain them and dry them well with paper towels. This allows the starch to come out and the sweet potato chips will bake more evenly and get crispier.
In a medium mixing bowl, mix the oil, cornstarch, garlic, onion powder, and pepper. Add the sweet potatoes and mix everything well so that the sweet potatoes are coated.
Prepare the air fryer basket by brushing it with cooking oil. Place the sweet potato chips into the basket as evenly as possible. It is okay if they overlap a bit because they will shrink. Bake them at 400 for 5 minutes. Then remove the basket and give the sweet potato chips a shake. Then bake the chips for another 4 minutes at 350 degrees.
Remove them from the basket and put them on a cooling rack. This will help them crisp up. While they are still warm, season them generously with seasoning salt.
Expert Tips
These will keep 4-5 days in the fridge. Just make sure they are stored in an air-tight container. That said, they are definitely best served fresh.

Can these be made in the oven? Yes, after tossing them in the oil mixture, you will place them on cookie sheets that are lined with parchment paper. Then bake them at 300 degrees for 25 minutes.
I can’t cut them that thin – will they still be good? They may be a chewier texture as baking them longer may cause the edges to burn.
Some look burnt – did I do something wrong? Unfortunately, some of the outside edges may get a little dark while the middles are cooking, but, if you are like me you will love those “burnt” edges – so tasty!
