Made in under 30 minutes, this easy one pan meal combines potatoes, green beans, and beef sausage in a flavorful, Italian dressing before it’s baked perfectly in the oven and ready to eat in no time.

Sometimes, what sounds really good for dinner is just something super easy to assemble, made on one pan, and still tastes absolutely delicious! Thankfully, these sausages and potatoes fit the bill perfectly. You can turn your brain off while making it, and it keeps the whole family happy!
Ingredient Info
- Smoked Sausage – This recipe calls for beef smoked sausage, but you can use smoked turkey sausage, pork, or whatever kind that calls to you.
- Green Beans – Fresh green beans are the best for this recipe. I don’t recommend using frozen or canned green beans. If you don’t like green beans you can leave them out. Make sure they’re washed with the ends cut off, then slice in half or in thirds depending on the size of the green beans.
- Potatoes – Baby Yukon Gold Potatoes are a favorite choice for this dish. If you’d like, you can use regular gold potatoes, and cut them up smaller, or use baby red potatoes. Make sure you wash and dry the potatoes before use!
- Olive Oil – You’ll use this as the base for the dressing. If you don’t like olive oil I recommend using avocado oil, grapeseed oil or canola oil instead.
- Italian Dressing Mix – You can buy a pack of dry Italian dressing mix at the grocery store. Make sure you buy the seasoning mix and not the liquid dressing.
- Seasonings – Aside from the Italian dressing mix, you’ll also need garlic powder and ground black pepper.
Step by Step Instructions
- Preheat the oven to 400°F. Grease a large sheet pan with cooking spray or line with parchment paper. In a large bowl add olive oil, Italian dressing mix, garlic powder and black pepper. Mix together to combine.
- Add the quartered potatoes to the bowl with the dressing and toss lightly to coat. Transfer the potatoes from the bowl to the sheet pan. Spread the potatoes evenly on the sheet pan, then bake in the oven for 20 minutes.
- Slice the sausage into thick rounds and add it to the bowl with the excess dressing. Cut up the green beans and add them to the bowl as well. Combine the sausage and green beans in the bowl.
- Take the potatoes out after 5 minutes of baking and flip them around. Add the sliced sausage and green beans to the sheet pan, and return it to the oven to bake for the remaining 15 minutes.
- Remove from the oven when time is up, or when the potatoes are crispy, the sausage is a nice brown color, and the green beans are bright green. Scoop a serving off the sheet pan, and serve while hot!
Tips & Advice
Storage – You can keep the leftovers in an airtight container in the fridge for up to 3 days. To reheat, you can place it back in the oven to crisp up, or the air fryer at 400°F for a few minutes.
Save Time & Dishes!
The most time consuming part of this recipe is the slicing and dicing. I recommend picking up one of these food choppers, to help speed up the prep time, or buy the ingredients already sliced and diced.
To save yourself some dishes, you can add the dressing ingredients to a large ziploc bag, shake it up, add the ingredients, and mix everything up that way!

You can add some diced jalapeños or bell peppers for some more flavor, or you can mix and match sausage flavors to make it a bit more exciting!
Potatoes take a while to cook, so it’s best to give them time in the oven to become tender and crisp up. Smoked sausage however is already cooked, the idea is to place it in the oven to warm up.
