Grab the pork chops, pat them dry with a paper towel and season with 1 ½ teaspoons of the garlic herb seasoning and sea salt. Set it aside, and pour the avocado oil into the skillet.
Let the avocado oil get really hot until it starts to shimmer. Place the pork chops onto the hot oil and let it sear on each side for 1-3 minutes, or until the outside is golden brown.
While the pork sears, start on the honey mustard sauce. In a medium sized bowl, add the mustard, honey, and the remaining garlic and herb seasoning and salt.
