Some good alternatives are penne, fusilli, rigatoni, shells, elbow, bowtie pasta, cavatappi, ziti, rotini and so much more.
- Boursin Cheese – The garlic herb and cheese flavored Boursin pairs the best with the flavors in this pasta dish, but feel free to use whatever flavor is your favorite.
- Olive Oil – Olive oil is a great option for most pasta dishes, but you can use vegetable oil or any oil of your choosing.
- Grape Tomatoes – Small grape or cherry tomatoes are ideal for this recipe because they bake down a lot easier than bigger tomatoes. You can try making this dish with diced tomatoes, it just may come out a bit more watery than you’d like.

Step By Step Instructions
- Begin by preheating the oven to 400°F and grab a 9×9 baking dish. Place your garlic and herb Boursin cheese in the center of the pan. Wash and dry your grape tomatoes and pour them into the dish so they surround the Boursin cheese.
- Mince your garlic and dice your shallot then sprinkle it on top of the cheese and tomatoes. Slice the basil into strips and sprinkle it on top. Pour the olive oil on top of everything, then add red pepper flakes, salt and black pepper. Pop the dish into the oven once it’s ready. Bake for 15 minutes.
- Boil the pasta noodles in some salted water according to the instructions and cook until al-dente. Drain the noodles and set aside.
- Next, grab a saucepan and place it on the stove over medium heat. Add olive oil to the bottom of the pan and let it heat up. Dice up your mushrooms. Add diced mushrooms to the saucepan and cook that down until the mushrooms turn brown. This should take about 5-8 minutes. After that time add the spinach, salt and black pepper and cook it down until it shrinks and becomes tender.
- Take the baked cheese and tomatoes out of the oven when done. You’ll know they’re done cooking when the tomatoes have burst a bit, and the color deepens. Remove from oven.
- Lastly, pour the cooked pasta on top of the baked cheese mixture, add the sautéed spinach and mushrooms to the dish if using, and stir everything together until combined. Serve hot and enjoy!

Equipment

Ingredients
- 1 Box Boursin Garlic & Fine Herbs Cheese other flavors can also be used
- 1 pound grape tomatoes
- 1 medium shallot diced
- 3 cloves garlic minced
- 1/2 cup fresh basil sliced
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- pinch pepper
- 1/4 teaspoon red pepper flake can use more or less if desired
- 8 ounces pasta of choice more can be used, this is just a general guideline for four servings (2 oz per person)
- 8 ounces OPTIONAL portobello or cremini mushrooms chopped or torn
- 3 cups OPTIONAL fresh baby spinach
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400 degrees F.
- Place the Boursin Cheese in the center of the 9×9 inch baking pan. Place washed grape tomatoes around the cheese.
- Sprinkle minced garlic, diced shallot and sliced basil over the tomatoes.
- Drizzle 3 tablespoons of olive oil over the tomatoes and cheese. Top with salt, pepper and red pepper flakes.
- Bake for 15 minutes, or until the grape tomatoes start to brown or split open.
- While tomatoes and cheese are baking, cook and drain pasta according to package directions for al dente.
- If using spinach and mushrooms, heat remaining olive oil in a pan over medium heat. Saute mushrooms until browned, approximately 5-8 minutes. Add spinach and cook until it just begins to wilt, approximately 1-2 minutes.
- When cheese and tomatoes are done, remove from oven and top with cooked pasta, as well as mushrooms and spinach if using. Stir just until combined and serve immediately.
