Chocolate, caramel & marshmallows. Oh. My. Word. These are incredible. Dream about them all day and than cry when they are all gone kind of good. We are big Disneyland fans in this house, and one thing I have to do every time we visit Disneyland is visit the chocolate covered mecca that is Pooh’s Corner. Some of the amazing treats on our last Halloween visit…

A Disney trip is not complete until I purchase and throughly enjoy something that has been covered in chocolate. I LOVE the Tigger Tails type of snack (though I’m not an orange fan, so not a huge fan of actual Tigger Tails). Anyways, I keep telling myself I HAVE to try making these at home. Well today I did. And I’m not sure if it’s a good thing or a bad thing as they are WAY too good for me to be left home unattended with them.
Here’s what you need…
Pretty simple. Marshmallows, sticks, caramels, melting chocolate and sprinkles. I had not used the Kraft Caramel Bits before today, so I wasn’t entirely sure how they would work. First things first, put your marshmallows on to your sticks. I did some with one marshmallow and some with three.
I decided to follow the microwave instructions for the caramel bits, so into a microwave safe bowl with two tablespoons of water…
Two minutes in the microwave and out came this…
Made me a bit nervous but a few scrapes with the spatula did the trick…
Now, the instructions said to lightly spray the wax paper with oil. Scratch that. However much you think you should spray, spray about 10 times that much. Than spray it again. Trust me on this one.
The caramel is STICKY. After attempting to “dip” the first marshmallow, I knew it wasn’t going to work (unless I wanted the marshmallows to stay in the bowl of caramel). I quickly grabbed a silicone brush, and that worked out pretty well.
So I basically brushed on the caramel. It worked out fine. You want to work quickly, as the caramel gets more sticky by the minute. I did at one point add a touch of water too it and pop it back in the microwave to smooth it out a bit. Even though it was sticky, it really wasn’t that hard. Plus, given you are going to cover the caramel in chocolate, it doesn’t have to look pretty, you just have to get the caramel on there.
They will now need to sit for a bit to set up. The caramel won’t become completely hard, but it will set up to be fairly firm. Enjoy your free time while waiting. I spent mine rummaging through my pantry to find more stuff to dip in chocolate. I have a bad habit of of doing that.

Where’s the rest of the caramel? Well right here, on the wax paper…
Nobody really enjoys chocolate covered wax paper, so this really isn’t what I was going for. In an effort to not have every single one stick, I put the remaining marshmallows into the fridge for about 20 minutes. They were much more cooperative that way.
After that I melted my chocolate and started dipping. I actually spooned it on (these babies are BIG!) and than let the excess chocolate drip off…
Now give each one a good dusting of the sprinkles of your choice. I stuck with the green food theme I have going on to stay in the St. Patty’s Day spirit.
There are a few other chocolate dipped goodies on there. We’ll discuss them tomorrow. 🙂

Add a cellophane bag and some ribbon, and you have a super cute homemade gift ready to give, that I am sure will be appreciated. Though you should probably be prepared to make more in that case, as these are like crack. Instant addiction here!
Now go dip something in chocolate!!!

I’ve got a recipe for marshmallows on my site, I’ve made them a couple of times and they really are very different than commercial ones, much wetter and spongier. I don’t know how well they’d hold up in a recipe like this, but to be honest, if you’re making your own marshmallows you should enjoy them just as they are, after all the effort that went into them!

Jonna, homemade marshmallows are one of the top items on my list of “things I don’t know why I’ve never tried”. I have a few events to bake for the next few days, but I’m dying to try homemade marshmallows. Love love love your blog. For all the baking I do, I’m actually a pretty picky eater, but if there was a blog poll on “which blogger’s house would you most want to go to for dinner” – you totally have it in the bag. I want, no, I need to have your Italian Nachos. ASAP. And you even make sweet potatoes the way I love them! I may seriously spend the next week reading and listing what I need to make.
