Chocolate, caramel & marshmallows. Oh. My. Word. These are incredible. Dream about them all day and than cry when they are all gone kind of good. We are big Disneyland fans in this house, and one thing I have to do every time we visit Disneyland is visit the chocolate covered mecca that is Pooh’s Corner. Some of the amazing treats on our last Halloween visit…

A Disney trip is not complete until I purchase and throughly enjoy something that has been covered in chocolate. I LOVE the Tigger Tails type of snack (though I’m not an orange fan, so not a huge fan of actual Tigger Tails). Anyways, I keep telling myself I HAVE to try making these at home. Well today I did. And I’m not sure if it’s a good thing or a bad thing as they are WAY too good for me to be left home unattended with them.
Here’s what you need…
Pretty simple. Marshmallows, sticks, caramels, melting chocolate and sprinkles. I had not used the Kraft Caramel Bits before today, so I wasn’t entirely sure how they would work. First things first, put your marshmallows on to your sticks. I did some with one marshmallow and some with three.
I decided to follow the microwave instructions for the caramel bits, so into a microwave safe bowl with two tablespoons of water…
Two minutes in the microwave and out came this…
Made me a bit nervous but a few scrapes with the spatula did the trick…
Now, the instructions said to lightly spray the wax paper with oil. Scratch that. However much you think you should spray, spray about 10 times that much. Than spray it again. Trust me on this one.
The caramel is STICKY. After attempting to “dip” the first marshmallow, I knew it wasn’t going to work (unless I wanted the marshmallows to stay in the bowl of caramel). I quickly grabbed a silicone brush, and that worked out pretty well.
So I basically brushed on the caramel. It worked out fine. You want to work quickly, as the caramel gets more sticky by the minute. I did at one point add a touch of water too it and pop it back in the microwave to smooth it out a bit. Even though it was sticky, it really wasn’t that hard. Plus, given you are going to cover the caramel in chocolate, it doesn’t have to look pretty, you just have to get the caramel on there.
They will now need to sit for a bit to set up. The caramel won’t become completely hard, but it will set up to be fairly firm. Enjoy your free time while waiting. I spent mine rummaging through my pantry to find more stuff to dip in chocolate. I have a bad habit of of doing that.

Where’s the rest of the caramel? Well right here, on the wax paper…
Nobody really enjoys chocolate covered wax paper, so this really isn’t what I was going for. In an effort to not have every single one stick, I put the remaining marshmallows into the fridge for about 20 minutes. They were much more cooperative that way.
After that I melted my chocolate and started dipping. I actually spooned it on (these babies are BIG!) and than let the excess chocolate drip off…
Now give each one a good dusting of the sprinkles of your choice. I stuck with the green food theme I have going on to stay in the St. Patty’s Day spirit.
There are a few other chocolate dipped goodies on there. We’ll discuss them tomorrow. 🙂

Add a cellophane bag and some ribbon, and you have a super cute homemade gift ready to give, that I am sure will be appreciated. Though you should probably be prepared to make more in that case, as these are like crack. Instant addiction here!
Now go dip something in chocolate!!!

Wondering how they would do if you used parchment paper instead of wax paper? They look soooooo good, guess I will have to try these for my grandsons!!

For caramel, I use plastic wrap. I also use a Wilton’s candy melting pot, it keeps the caramel at the right consistency, and to thin it, use a bit of Crisco. You can do that with the chocolate as well.

A local chocolate shop covered marshmallows in carmel and then almonds and then milk chocolate. I found your website searching for ways to recreate them. I thought they’d make a good stocking stuffer. Thanks for the info. The Halloween version you made are totally cute!

is there a difference between using melting chocolate (color) and food color?

If you are adding color to melting chocolates, you’ll want to use an oil based color that is made for melting chocolate (to avoid the chocolate seizing). Heres a little tip for next time you make these… if the caramel is getting too sticky or a little too hard, pour in a couple tblspoons of milk, give it a good mix, and shove back in the microwave for a few seconds. Stir it again once its out, and it’ll be a lot easier to work with.

We go to Disneyland every year and visits to Pooh Corner for treats is one of our favorite parts!! I’m always on the look-out for copycat recipes – have you ever found any for those huge cookies that they sell? My favorites are the white chocolate/raspberry and the snickerdoodles (which they no longer sell), but I can’t find anything comparable. I do know that they are not made in-house – they are supplied by Selma’s – but that has not helped me find any recipes. Love your blog!

OMG!! i have only just found this website, and clearly I have just found what was missing in my life!!! I hate chocolate, but love making chocolate type things for friends and family (Just call me monica gellar!!) lol anyway these blogs had me in stitches!! Michaela, I put them on to wax paper (which I usually have on a cookie sheet so that I can move it if needed before they have set). All of ours were gone within about four days, but they tasted fine right up until that fourth day. I do not keep mine in the fridge – mainly because I live in Phoenix, and I worry sometimes that if I get them too cool, than transport them and they warm up too much, that they will crack (I’ve had that problem a few times). I find they usually do well at room temp.
