Ingredient Notes and Substitutions
- Flank Steak – While flank steak is ideal in this recipe, you can also use skirt steak.
- Rotel – Rotel really brings a great flavor to these fajitas. You can use the Original Rotel, or try one of the other varieties that are available. If you don’t have Rotel, you can use 1 cup of diced tomatoes with ¼ cup of diced green chili peppers (try to squeeze out excess moisture). Another option would be 1 ¼ cup of salsa. Try to strain out any excess moisture in the salsa.
- Fajita Seasoning – If you’d like to make homemade fajita seasoning, use 2 teaspoons chili powder, 2 teaspoons cumin, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon salt, ¼ teaspoon sugar, and ¼ teaspoon cayenne pepper. You can also use taco seasoning, it will just be slightly spicier.
- Bell Peppers – not only do bell peppers help create the recognizable fajita flavor, they also give this dish great color. Red peppers are a must, but we always make sure to add yellow and green pepper as well.
- Onion – You can use white onion or yellow onion.
- Water – If you are cooking on high heat, or if you just like more broth in your recipe, you can add in 1/2 a cup of water when you add your steak to the crockpot.
How To Make Crockpot Fajitas
- Place the flank steak into the crockpot. Top it with the onion, garlic, fajita seasoning, pepper, and rotel. You can slightly mix together the ingredients after adding them to the crock pot.
- Set the slow cooker to cook for 4 hours on high temperature or 8 hours on low temperature. Cooking low and slow will give you the most tender fajitas.
- When there is 1 hour of cook time remaining, add the sliced bell peppers to the crock pot and toss with the excess spices and liquid. Allow to cool for the final hour, then transfer the meat from the crockpot to a large cutting board to shred. Add the meat back into the slow cooker and stir the extra liquid and vegetables together. Serve with tongs or a slotted spoon.

- Storage: These slow cooker beef fajitas will keep in the refrigerator in an airtight container for up to 3 days, or in the freezer for up to 2 months.
- Double Up: The recipe can easily be doubled!
- Make It Spicy: While this recipe only calls for one seasoning packet, if you prefer your meat to be even more flavorful, feel free to add an additional packet. You can also add jalapeno pepper to kick up the heat.
- Slice It Up: If you would like your steak sliced or shredded, slice the steak across the grain into thin beef strips. Take note that because these are crockpot fajitas, the meat does tend to fall apart a bit when slicing.

I find one hour to be the ideal amount of time to soften peppers while still keeping them crisp and tender.
This is a matter of taste, but cheese makes a delicious topping for steak fajitas.
Cheddar cheese is our favorite, but other great choices include Colby Jack or Queso Blanco.
The two seasonings are fairly similar. Taco seasoning tends to have more chili powder and oregano than fajita seasoning does.

So you don’t have to add water, but can if you would like. If you like your recipe to turn out more brothy, or if you are cooking on high heat (even then it’s not required) you can add 1/2 cup. I like a thicker result, so the liquid from the steak itself and rotel are all I use.
