This delicious and Easy Rum Cake is such a classic dessert. Growing up in the 90’s I remember Kathy’s Rum Cakes being all the rage here in Arizona, and every single party would have a rum cake.
I’m not sure if we managed to get burnt out on rum cake or what, but rum cakes don’t seem as common any more. That’s what makes it even more special when someone gives you not only their rum cake, but their grandmother’s rum cake recipe as well!
When you are a food blogger, nobody cooks or bakes for you.
You can ask almost any food blogger and they will tell you the same thing. I’m not sure if it’s because people think you’ll be judgmental or what. What I do know is that it’s kind of a bummer to never get to partake in treats that someone else made.
So imagine how happy I was when my daughter’s teacher, the wonderful Ms. Caylin, told me she was going to make me her Grandmother’s rum cake.
EASY RUM CAKE
Look at that beautiful cake right there! Ms. Caylin isn’t only a rockstar teacher for my daughter, she’s an amazing cook and baker as well.
After school my daughter takes Ms. Caylin’s cooking class once a week, and over the summer Ms. Caylin even taught a dog training class for the kids. My daughter AND my puppy went to school that week. It was pretty much the best thing ever. They might have even made my favorite dog cake recipe!
It’s safe to say that Ms. Caylin is one of my daughter’s favorite people and I’m pretty sure she’s my dog’s favorite person ever. Yes, even above me. Some days he comes to school drop off with us, just to see Ms. Caylin. Image seeing someone reunited with their long lost love after years apart. That’s basically his reaction EVERY time he sees her.
We all love Ms. Caylin, and we certainly loved her rum cake as well! This cake was that perfect combo of flavor and texture, with that yummy buttery rum sugar glaze soaked into it. My husband and I made sure there weren’t any leftovers on this one.
She was nice enough to give me her grandmother’s recipe for this cake. Let me tell you, we’ve hit the teacher lottery right here folks.
This recipe is simple and starts with one of my favorite things when it comes to making cake. A boxed cake mix. I have a great love of doctored cake mix recipes, and this is no exception.

I have been using this exact recipe for years except mine says cool overnight before flipping. I turn my cake over onto my serving plate and place in a 170 degree oven. It plops out after a few minutes.
Also, my recipe says to poke holes in the bottom. I use a small syringe and inject the rum sauce into the holes. This is such a good recipe!!

The cake is amazing, but a pain to get out of my well greased pan. Good thing the bday guy didn’t mind ugly! Lol.

For any bundt cake I high recommend a good non-stick pan and making sure it’s well greased. I also find that while I rarely replace any of my baking pans, bundt pans are the exception. They seem to get more challenging with time (non-stick coating losing it’s magic) so I do replace those every few years. Hope that helps!
