This delicious Eggnog Crumb Cake is easy to make and is perfect for an indulgent breakfast or brunch, or as an afternoon snack with a hot cup of coffee. Bring some holiday flavor to your breakfast with this easy eggnog crumb cake this month.
I found this recipe is Food Network magazine and it was one of those recipes that I basically had to make immediately. I mean crumb cake on it’s own is pretty darn amazing, but add in some holiday cheer with eggnog flavor, and you just can’t go wrong. I mean look at that crumb cake topping. Drooling!
My family loves eggnog flavor. My husband is big on eggnog straight up, but I prefer my eggnog in recipes like this eggnog crumb cake. It’s just the perfect amount of flavor without being overbearing. This would be a fantastic Christmas morning breakfast or brunch dish.
The ingredients in this recipe are pretty straight forward, most of them are probably already in your kitchen. The only exceptions might be sour cream, eggnog itself and some nutmeg. This comes together quickly, takes about an hour to bake, and I can confirm it is very good the next day. I think you can safely make this a day or two ahead of time, just keep it tightly covered.
We decided to leave the glaze off and add it to the slices individually. That way you can have more, or less, eggnog glaze on your eggnog crumb cake. You decide, I’m not the glaze boss of you.
EGGNOG CRUMB CAKE
Eggnog Crumb Cake
Ingredients
Cake
- Cooking spray
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 10 tablespoons butter softened
- 1 cup sugar
- 2 large eggs
- 1 egg yolk
- 1 tablespoon vanilla extract
- 1 cup sour cream
Topping
- 3/4 cup all-purpose flour
- 2/3 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon salt
- 5 tablespoons cold unsalted butter cut into small pieces
Glaze
- 1 1/2 cups powdered sugar
- 3 to 4 tablespoons eggnog
- Pinch salt
- 1/4 tsp nutmeg
Instructions
Cake
- Preheat the oven to 350 degrees F. Coat a 9 or 10 inch springform pan with cooking spray. Combine flour, baking powder, nutmeg, cinnamon, baking soda and salt in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, approximately three minutes. Beat in the eggs, egg yolk and vanilla and mix until combined.
- Add 1/2 of the flour mixture to the butter mixture and mix until well incorporated. Add in half the sour cream and mix until incorporated. Repeat with remaining dry mixture and sour cream. Pour batter into pan that has been prepared and set aside.
Topping
- Combine flour, brown sugar, cinnamon, nutmeg and salt in a bowl and mix well. Work in the butter with a pastry blender until crumbs have formed. Sprinkle the topping over the cake batter. Bake until golden brown and a toothpick inserted into the center comes out clean, 1 hour to 1 hour 10 minutes for a 9" pan, or 50 minutes to 1 hour for a 10" pan. Remove and place on a rack and let cool 20 minutes, then remove the springform ring and let cool completely.
Glaze
- Stir together the confectioners' sugar, salt, nutmeg and 3 tablespoons eggnog in a medium bowl until smooth. If the glaze is too thick, gradually whisk in the remaining 1 tablespoon eggnog as needed. If glaze is to thin, add more powdered sugar, one tablespoon at a time. Spoon or pipe glaze over cake prior to serving. Entire cake can be covered with glaze or each piece can be glazed independently.
