- Lasagna Noodles – Regular lasagna noodles are the best for this recipe. You will need to boil them so I don’t recommend using no-boil lasagna noodles.
- Ricotta – Ricotta is a great soft cheese option for this recipe. If you don’t have any, or don’t like Ricotta, you can substitute this for Mascarpone cheese. Just add a dash of salt to the mascarpone before you use it.
- Mozzarella – Mozzarella is key to this rolled lasagna bake! Make sure you get shredded mozzarella cheese, or buy a block of mozzarella and shred it yourself!
- Parmesan – Freshly grated parmesan cheese is always a must!
- Egg – This will help keep the cheese mixture together!
- Marinara Sauce – You can use any brand of marinara sauce that you like.
- Ground Beef or Sausage (optional) – Ground turkey can also work as well! You can pretty much use whatever ground meat you prefer in this lasagna roll up dish, or you can use none at all! You can even use a mixture of Italian sausage and ground beef.

Step By Step Instructions
- Start by preheating your oven to 375°F. Bring a large pot of water to a boil and cook your lasagna noodles according to the directions on the package. You’ll want to cook them until they are al dente, so cut a minute or two off the cooking time.
- Lay out a clean kitchen towel. Drain the lasagna noodles and lay them out on the towel to prevent them from sticking. Set those aside and start on the filling.
- Grab a large mixing bowl and add the ricotta cheese, 1 cup of the mozzarella cheese, parmesan, egg, minced garlic, basil, dried oregano, salt and pepper. If you choose to add meat, cook, crumble & drain the ground meat before adding it to the filling. Stir everything together until evenly combined. Set this aside.
- Grab a 9×13 baking dish. Pour 1 cup of marinara sauce into the baking dish and spread it evenly across the bottom.
- Grab a lasagna noodle, and spread about 2-3 tablespoons of the cheese mixture on top of the noodle evenly. Roll the lasagna noodle up tightly starting from one end to the other. Place the rolled up noodle seam side down into the baking dish. Repeat with the rest of the noodles until your baking dish is full.
- Pour the rest of the marinara sauce on top of the lasagna roll ups and spread evenly. Sprinkle the remaining ½ a cup of mozzarella on top, then cover the baking dish with aluminum foil. Bake in the oven for 25 minutes. Take the dish out, and remove the foil. Pop it back in the oven for an additional 5 minutes, until the cheese becomes a golden brown and starts to bubble. Let the dish cool for a few minutes before garnishing with fresh basil and serve!

Storage – You can store the leftover Lasagna Roll Ups, covered in the fridge for 3-5 days, or in the freezer for up to 3 months.
To reheat, defrost in the fridge if frozen, and microwave for 1-2 minutes, or place the dish back into the oven for 10-15 minutes until heated through.

To avoid tearing the noodles, make sure to keep an eye on them while the cook. Constantly stir them while they’re cooking to avoid them sticking together. Also add a few more than just 12 noodles to the pot, just in case one noodle does tear or rip, you will have extra to work with.
