- Chicken – I used boneless skinless chicken breasts for this recipe. You can also use boneless, skinless chicken thighs instead.
- Cherry Tomatoes – You can also use grape tomatoes, or mini heirloom tomatoes.
- Sun Dried Tomatoes – This is the star of the show! If you don’t have any, try using a little bit of tomato paste instead, or add a few more cherry tomatoes.
- Heavy Cream – Heavy cream is also known as heavy whipping cream.
- Parmesan – Freshly grated parmesan is best because it melts down nicely. However, if you’re going to use store bought parmesan, I recommend using the freshly grated kind from the deli section.
- Fettuccine – I used fettuccine noodles for this recipe, but you can really use any type of pasta you have on hand. Regular spaghetti, linguine, bowtie, penne, rigatoni, you name it! You can use it.
Step by Step Instructions
- Cut the chicken breasts into cubes. Add them to a bowl and season with garlic powder, salt, & pepper. Heat a skillet over medium-high heat with olive oil. Add the chicken and cook for 5-7 minutes each side. Remove from the skillet when cooked through and browned then set aside.
- Boil water and cook the pasta according to package directions. While that cooks, add the garlic, oregano, dried basil, red pepper flakes, salt and pepper to the skillet and sauté for 1-2 minutes. Add the halved cherry tomatoes and cook for another 2-3 minutes or until soft.
- Add heavy cream and stir until it comes to a simmer. Add fresh parmesan and stir until smooth. Add the sun-dried tomatoes, fresh basil and stir. Add the chicken back in, then drain the pasta and add it to the sauce. Toss to coat the chicken and pasta in the sauce. Serve and garnish with extra fresh basil and parmesan.
Tips & Advice
Storage – You can store the leftover Marry Me Chicken Pasta in an air-tight container in the fridge for 3-4 days, or you can store it in the freezer for 2-3 months.
Thick or Thin – If you want your sauce a bit thinner you can add more heavy cream. If you want it a bit thicker, try adding add less cream or more parmesan cheese.
