Sugar Cookie Bars
I love sugar cookies, but they can be a bit time consuming to make with the rolling, cutting and decorating. That’s where sugar cookie bars win for convenience.
And while these may be quick and convenient to make, they are still packed full of delicious sugar cookie flavor.
Sugar Cookie Bar Frosting
I did a bit of a marble effect with the frosting, but that’s also optional. These will taste just as great with a single color frosting. Pink frosting and some rainbow sprinkles would give you what I consider the classic sugar cookie bar look.
Making Soft Sugar Cookie Bars
If I can give you one piece of advice when making these sugar cookie bars, it’s DO NOT OVER BAKE. As soon as that center starts to set and isn’t all wiggly jiggly, you need to pull these out.
It’s a fine line and if you go over it, they are still good, but they are not as soft. Even if they seem a bit underdone when you pull them out, after sitting for a few minutes outside the oven, they come together. Then you get to sink your teeth into these delightful sugar cookie bars!

Sugar Cookie Bars
Ingredients
Bars
- 1/2 cup butter softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons sour cream
- 2 teaspoon pure vanilla extract
- 2 1/3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Frosting
- 1/2 cup butter softened
- 2 cups powdered sugar
- 1-2 tablespoons milk
- 1 teaspoon vanilla extract
- 4 different colored bottles of food coloring
- 4 sandwich style zipper bags
- 1/2 cup Brach’s Conversation Hearts for garnish
Instructions
- Preheat oven to 375 degrees F.
- Line a 9×13 baking pan with foil and spray with non-stick cooking spray.
- Combine butter and sugar in a bow and mix with electric mixer until light and fluffy, about 2-3 minutes.
- Add egg, sour cream and vanilla to mixture and beat until combined.
- Add flour, baking powder and salt to mixture and stir until just combined. Do not over mix.
- Scoop dough into baking pan and use fingers to distribute dough over bottom of pan.
- Bake for approximately 15 minutes or until the center appears set and sides are starting to lightly brown. Do not overbake. Remove from oven and allow to cool completely prior to frosting.
- To make frosting, combine softened butter and powdered sugar in a bowl and mix with electric mixer until well combined. Add milk and vanilla and mix until well combined. If a thinner frosting is desired, add more milk, 1 teaspoon at a time until desired consistency is reached. If single colored frosting is desired, add food coloring then spread frosting over bars and skip to #11.
- If marbled frosting effect is desired, divide frosting evenly into four bowls. Use food coloring to color frosting in each bowl to desired shade. Transfer frosting from each bowl into it’s own sandwich style bag. Cut a small corner off of each bag to allow frosting to be piped onto bars from bags.
- 10. Using bags to pipe, place small dollops of different colored frosting all over bars. Using an offset spatula, very gently spread dollops together. Do not over spread or you will lose the marbled color effect in the frosting.
- 11. Gently press Brach’s Conversation Hearts into frosting, then cut and serve.

I make the reg Tollhouse cookie recipe but double it and add 1 cup of oatmeal. They don’t spread as much and are nice and chewy. Soo good.
